Popular Chef’s Tasting Menus Continue in ’08

February Highlights European Cuisine

 

SACRAMENTONightly Chef’s Tasting Menus offer patrons a spectacular Five-Course Dinner with optional Wine Pairings every night.  Chef’s Tasting Menu changes monthly.

 

In February, Executive Chef Deneb Williams presents a First Course of Chèvre Ravioli with Black Pepper, Shallots and Thyme with Pinot Noir Reduction and Roasted Beets.  Next the menu features Niçoise Potato and Asparagus Salad followed by Entremet of Lingonberry Sorbet.  The Third Course featuring Roasted Poussin, Fingerling Potatoes and Butternut Squash leads to a fourth of Scallop and Foie Gras.

 

The dinner finishes with a dessert trio of Chocolate Sabayon, Marzipan Parfait and Apple Tarte Tatin.

 

Optional Wine Pairings have been specially selected by Mario Ortiz, Sommelier and General Manger, and may be ordered with the Chef’s Tasting Menu for a set price.

 

Wine pairings include:  2005 Carneros Creek, Reserve Pinot Noir; 2004 El Molino, Chardonnay, Rutherford; 1999 Neyers, Syrah, Hudson Vineyards, Napa Valley; 2005 Rombauer, Chardonnay, Napa Valley; and a 2004 Bussola, Recioto Della Valpolicella Classico D.O.C., Vento to accompany dessert.

 

The Prix Fixe Dinner is $68 per person for food only, or $98 with wine pairings.

 

Valet parking is available.
